Abalone are considered to be one of life’s great delicacies and are consumed by many different cultures. It’s common to find Jade Tiger Abalone® served as sashimi as well as steamed, salted, braised, sautéed or simmered.

Jade Tiger Abalone® Sashimi

  1. Slice thinly, serve close to each other.
  2. Garnish with olive oil and a squeeze of lemon.

Simple Steamed Jade Tiger Abalone®

  1. Remove from the shell and steam for two and a half – three minutes (maximum) in a commercial steamer.
  2. Add XO paste, chilli and ginger to finish.
  3. Serve immediately.

Simple Stir-Fry Jade Tiger Abalone®

  1. Shave abalone into thin strips.
  2. Stir-fry momentarily on high heat with grape seed oil, ginger and garlic paste, snow peas, carrot.
  3. Add a little cornflower to glaze and serve.

Traditional Braised Jade Tiger Abalone®

  1. Remove Jade Tiger Abalone® meat from the shell.
  2. Braise for 4 hours on low heat with pork and chicken bones.
  3. Remove the bones and continue to cook for another 4 hours.
  4. Remove the abalone.
  5. Thicken the stock with cornflower or potato starch and oyster sauce.
  6. Combine with abalone and serve.

Charcoal Grilled Jade Tiger Abalone®

  1. Place inside vacuum pack bag.
  2. Add vegetable stock, garlic, shallot to taste.
  3. Seal and cook in steam oven at 80 degrees for 45 minutes.
  4. Score top of the abalone meat.
  5. Brush with olive oil.
  6. Char grill with smokey woodchips and spring onion.

Jade Tiger Abalone® Ceviche

  1. Remove meat from shell, repetitively smash the flesh to soften.
  2. Finely slice into small diced pieces.
  3. Combine with sea salt, diced avocado, lime juice, mirin and sake.
  4. Shape mixture into a mould and serve with micro herb salad on top.

Korean Jade Tiger Abalone®

  1. Place inside vacuum pack bag.
  2. Add vegetable stock, garlic and shallots to taste.
  3. Seal and cook in steam oven at 80 degrees for 45 minutes.
  4. Add the steamed abalone to a vegetable stock with the daikon, kimchi and other soup ingredients to taste.
  5. Garnish with chilli threads and serve with sweet soy.

Mediterranean Jade Tiger Abalone®

  1. Finely slice Jade Tiger Abalone® meat on a slicing machine.
  2. Toss with extra virgin olive oil, sea salt, citrus peel and capers.
  3. Place on a hot flat grill and add shaved fennel.
  4. Cook momentarily, remove and serve.
